Honey was humanity's first sweetener, and for most of recorded history, it was the only sweetener. Long before sugarcane reached Europe, before sugar beets were bred for their sucrose, before high-fructose corn syrup was even a chemist's daydream, there was honey — golden, fragrant, and irreplaceable. The ancient Egyptians baked honey cakes for their gods. The Romans drizzled it over roasted meats. Medieval European kitchens ran on it. And then, sometime in the seventeenth century, refined sugar arrived in bulk, and honey was quietly demoted from essential to optional — a condiment, a folk remedy, a thing you stir into tea when you have a cold.

This is a demotion we should reverse. Honey is not a substitute for sugar. It is a superior ingredient — more complex in flavor, more interesting in chemistry, more rewarding in result. Cooking with honey requires a few adjustments and a little knowledge, but once you have both, you will find that honey does things in the kitchen that sugar simply cannot.

The Chemistry of Cooking with Honey

Honey is not sugar dissolved in water, though it might seem that way. It is a supersaturated solution of multiple sugars (primarily fructose and glucose, but also maltose, sucrose, and dozens of others), enzymes, acids, minerals, and aromatic compounds. Honey browns faster. The fructose in honey caramelizes at a lower temperature than sucrose. This means honey-sweetened baked goods will brown more quickly — sometimes too quickly. Lower your oven temperature by 25°F (about 15°C) when baking with honey, and watch carefully.

Honey is hygroscopic. It attracts and retains moisture from the air. This is why honey cakes and cookies stay moist for days longer than their sugar-sweetened counterparts. It's also why honey-heavy doughs can be sticky to work with — flour your hands and your surface generously.

For raw applications (drizzling, spreading, sweetening drinks): Use whatever you love. This is where varietal honeys shine brightest — on a cheese board, over yogurt, in tea — because nothing interferes with the honey's own flavor.

Classic Recipes

Honey Butter

The simplest recipe in this chapter and possibly the most addictive. Combine ½ cup softened unsalted butter with ¼ cup honey (any variety) and a pinch of flaky sea salt. Whip with a fork or hand mixer until fluffy and light. Spread on warm biscuits, cornbread, or toast. Store in the refrigerator; let soften before serving. Honey Vinaigrette

Cut into diamonds with a sharp knife before baking. Bake at 350°F for 45–50 minutes, until golden and crisp. While it bakes, make the syrup: bring 1 cup water, 1 cup honey, ½ cup sugar, 1 tablespoon lemon juice, and 1 cinnamon stick to a boil, then simmer 10 minutes. Close loosely (fermentation produces gas) and let sit at room temperature for a month, flipping the jar daily. The garlic softens, the honey thins and takes on a garlicky warmth, and the result is a condiment of extraordinary versatility. Drizzle the honey over pizza. Eat the cloves on toast. Stir both into stir-fries.

Honey-preserved fruits. Pack clean, ripe stone fruits (halved, pitted) into jars and cover with honey. The honey draws moisture from the fruit through osmosis, preserving it while absorbing the fruit's flavor. Apricots, figs, and cherries are particularly good. Use the honey-fruit combination over ice cream, in cocktails, or spooned into yogurt.

Honey syrups for drinks. Dissolve honey in equal parts warm water to create a honey simple syrup. Use in cocktails (the "Bee's Knees" — gin, honey syrup, lemon — is the classic), iced tea, or lemonade. Infuse with herbs (thyme, lavender, rosemary) for additional complexity.

A Note on Heat and Raw Honey

There is a persistent belief that heating honey destroys its beneficial properties. This is partially true: high heat degrades some enzymes and volatile aromatic compounds. But "high heat" means sustained temperatures above 140°F (60°C) — not the brief warming involved in stirring honey into warm tea or drizzling it over roasted vegetables.

If you are using honey medicinally — for its enzymes, for its antimicrobial properties — use it raw and unheated. If you are cooking with it, heat away with confidence. The flavors deepen, the sugars caramelize, and the results are magnificent. The bees did not make this honey so it could sit in a jar forever. They made it to be consumed. Honor their work by consuming it joyfully.
